Chicken Fajitas

I made these chicken fajitas last night for dinner. A Chicken Fajitas Recipe that is fast and easy to make. Fajitas got their name from the skirt steak or Faja in SPanish that is commonly used.






INGREDIENTS:
1 ½ cups soy sauce
1 ½ cups water
¼ cup lemon juice
1 cup ice
½ cup pineapple juice
¼ cup brown sugar
4 boneless chicken breasts
2 medium green peppers, sliced thin
2 medium white onions, sliced thin
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
2 medium tomatoes, diced small
1 small bunch cilantro, chopped
2 teaspoons lime juice
½ cup corn
1 can black beans, drained
1 cup salsa
12 Pita Bread


DIRECTIONS:
In a bowl mix soy sauce, water, lemon juice, pineapple juice, brown sugar and ice, stir until all sugar is dissolved. Place chicken breasts in marinade; cover and refrigerate for two hours.

In another bowl mix diced tomatoes, cilantro, lime juice, corn, black beans, salsa, ½ teaspoon salt and ½ teaspoon pepper. Then remove chicken from the marinade, grill or bake chicken until cooked.

In a medium saute pan, place two tablespoons of olive oil in pan and heat, add peppers and onions. saute until tender, season with salt and pepper.
Slice chicken to ¼ inch thickness, serve sliced chicken over sauteed peppers and onions, place in Pita Bread, add chilled diced tomatoes, cilantro, lime juice, corn, black beans, salt and pepper and salsa.


Best to serve with extra salsa, garlic sauce and chips on the side.

Easy Pasta Recipe for everyone

When you talk about Italian pasta dishes, perhaps the most popular is Fettuccine Alfredo. Here is my version of a healthy Fettuccine recipe. Simple, easy and so yummy.


Ingredients:

1 16oz tub fat free cottage cheese
1 minced garlic
1 Teaspoon extra virgin Olive oil
¼ cup fat free sour cream
3/4 cup water
1 Teaspoon salt
Juice from 1 lemon
½ Teaspoon sugar
cooked ham




Procedure:

On a large pot of salted water to a boil. Add fettuccine pasta and cook for 8 to 10 minutes or until al dente; drain water and rinse with cold water until cold


in a medium saucepan saute' minced garlic in olive oil over medium heat for one minute then add cooked ham. Pour in cottage cheese, sour cream and combine cooked fettuccine

Serve immediately, garnish with grated parmesan cheese and fresh parsley.
